PISCO SOUR
(serves one)

This classic Peruvian cocktail is an inspiration for many of the nation's top bartenders. Not only do they play with the brand of pisco and texture of the cocktail, but they've also invented recipes for passion fruit, gooseberry, and strawberry sours.

 
  3 ounces pisco      
  1 ounce key lime juice      
  1 ounce sugar syrup      
  1 egg white      
  ice      
 
bitters
     
  Pour all ingredients into an ice-filled cocktail shaker. Shake energetically until mixture becomes frothy. Serve and decorate with two drops of bitters.
